Golden Dragon Crispy Chicken is a classic Cantonese dish.

Golden Dragon refers to prawns that are deep-fried until golden brown. Crispy Chicken refers to a whole chicken. Remove the bones and meat, leaving the skin on. Finely chop the prawns, season and mix into a prawn paste. Stuff the prawn paste into the chicken skin, cover with malt water and leave to air dry.

The air-drying process is the secret to getting that perfect golden-brown crust. The pure prawn paste is white with a touch of red. The prawn meat is full of astaxanthin, a natural pigment that gives it that reddish tint and the taste is nothing short of amazing, flavourful, crispy and just fresh!
