Gold and silver sausage is a type of cured meat in which fat pork is stuffed into a pig's liver.

The main ingredients are lean pork, pork liver and chilled pork. Chilled pork is pork marinated in sugar and wine. It’s named after the copper coins it looks like when burnt on a spit.
